Lemon Salmon with Asparagus and Brown Rice

Preparing a great dinner means you always have something to look forward to during your day. My days are normally jam packed, so I make one big batch of dinner a week, and then eat that throughout the week. As a pescatarian, fish is one of my favorite foods but I've never tried cooking fish before. Being a senior in college makes you feel powerful...powerful enough to try your hand at cooking fish. I concocted this recipe on my own and it ended up being DELICIOUS. I feel like a hypocrite because I am always on my mom for not following recipes and making things up as she goes, but here I am...at least I can say I learned from the best!
Ingredients:
- fish filets
- lemons
- herbs and spices: salt, pepper, rosemary, thyme, and oregano
- asparagus
- brown rice
- olive oil
Method:
- preheat oven to 350 degrees
- line a baking sheet with aluminum foil and then drizzle olive oil to lightly cover the pan
- cut up lemon and layer the lemon on the sheet
- mix herbs and spices in a bowl and then generously lather filets with spice rub (front and back of fish!)
- put filets on top of lemon
- cut up another lemon and layer that on top of the filets
- put asparagus on baking sheet and coat with some olive oil and salt and paper
- bake for about 15 - 20 minutes - check occasionally to see if the fish is done by gently breaking apart small pieces with a fork. Fish that is done will easily fall apart.
- while waiting for that to cook, you can prepare brown rice according to the package
Cooking fish was way easier than I thought and tasted really good too! Step out of your comfort zone and try cooking something new!
