Chocolate Peanut Butter Oatmeal Cups

The perfect way to start a morning is with a healthy breakfast that will carry you through the day. This week, I made Chocolate Peanut Butter Oatmeal Cups as a nutritious and filling start to the day. I found this recipe on MyFitnessPal and while the original uses protein powder, I opted not to. These are delicious and helped me use up my very ripe bananas.
Ingredients:
- 2 tablespoons chia seeds, plus 6 tablespoons water
- 3 medium-to-large ripe bananas, mashed
- 1 cup almond milk
- 1/4 cup creamy peanut butter
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 3 cups old fashioned oats
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon baking powder
- pinch of salt
Directions:
1. preheat oven to 350 degrees F. Spray muffin tin with cooking spray
2. in a small bowl, stir together chia seeds and water to make "chia eggs" and set aside
3. mash bananas in a large bowl. add almond milk, peanut butter, maple syrup and vanilla. Stir until mixed well and then add in chia eggs.
4. to the large bowl, add protein powder, oats, cocoa powder, baking powder, and salt. stir.
5. evenly scoop mixture into muffin tins and fill to the top
6. bake for 25 minutes and then remove from oven and cool
